Garlicky Sauteed Radishes
Fresh, firm, crunchy and spicy radishes are pan fried with greens in a mixture of butter and olive oil, sauted with minced garlic and added salt and pepper to taste.
10-15 radishes washed and quertered
2 cloves of garlic minced
2 TBSP of Olive oil & Butter
2 cups of roughly chopped greens, choice of chard, kale, collards etc
Salt & pepper to taste
In a medium cast iron skillet over med high heat add olive oil and butter, swirling together once the butter is melted and slightly sizziling.
Add the radishes to the skillet and cook for 3-4 minutes without stirring, browing the radishes. After 3-4 minutes stir the radishes and cook for additional 3-4 minutes without stirring. Once agin stir the radishes and add garlic stir, cooking for 1-2 minutes more. Add the chopped greens and whilt into the radishes about 3-4 minutes. Season with salt and pepper to taste and serve.
