These tortilla rolls are folded burrito style, and jam packed with lettuce, tomatoes, cucumbers, pickles, cheddar cheese, caramelized BBQ chicken and a homemade house sauce. It's delightfully refreshing and is super simple to make.
1 cup - ketchup
3 tbsp - vinegar (I like to use balsamic)
1 tbsp - Worcestershire sauce
1 tsp - onion powder
1 tsp - garlic powder
1/2 cup - brown sugar
2-4 tbsp - molasses (optional)
salt and pepper to taste.
6 - Whole wheat tortillas
2 - heads romaine lettuce chopped.
1/3 cup - mayo*
¼ cup - ranch dressing*
4-6 - dill pickles diced
2 - tomatoes cubed
1/3 cup - cucumber diced
1 cup - shredded cheddar cheese
3 TBSP - olive oil
2 - chicken breasts (cut into cubes)
Add all your BBQ sauce ingredients together in saucepan and cook until thickens, then let cool
Mean while cut up your chicken breasts into cubes and fry on medium low with 3 tbs olive oil until cooked 5-8 minutes.
Add to a large bowl, diced pickles, cucumbers, tomatoes, lettuce, and cheese; stir to combine. In a separate bowl toss cubed chicken with your BBQ sauce set aside. To the lettuce pickle, tomato, and cheese mixture. add mayo, and ranch dressing mix until combined. Place salad mixture onto six wraps then place your chicken and BBQ sauce mixture on top of the salad, *roll up wrap in your desired manner.
*If salad mixture is too dry add more mayo and or ranch dressing to taste.
*We roll ours up burrito style right side over filling, bottom up, left side over and roll.
*For an extra special treat, you can add bacon.
*To turn this into a dinner, we simply add a side of roasted potato wedges or tortilla chips and salsa
