Fresh, firm, crunchy and spicy radishes are pan fried with greens in a mixture of butter and olive oil, sautéed with minced garlic and added salt and pepper to taste.
10-15 - radishes washed and quartered
2 - cloves of garlic minced
2 tbsp - olive oil & Butter
2 cups - chard or kale or collards roughly chopped
salt & pepper to taste
In a medium cast iron skillet over med high heat add olive oil and butter, swirling together once the butter is melted and slightly sizzling.
Add the radishes to the skillet and cook for 3-4 minutes without stirring, browning the radishes.
After 3-4 minutes stir the radishes and cook for additional 3-4 minutes without stirring. Once again stir the radishes and add garlic stir, cooking for 1-2 minutes more.
Add the chopped greens and wilt into the radishes about 3-4 minutes. Season with salt and pepper to taste and serve.
